Iron Deficiency in the Global Context

Dr. Rebecca Stoltzfus, professor in the Division of Nutritional Sciences at Cornell University, presents Iron Deficiency in the Global Context.

During this 72-minute audio-visual cyber-presentation, Dr. Stoltzfus reviews causes, consequences, and potential solutions to iron deficiency - one of the most prevalent nutritional deficiencies in the world – and anemia, a distinct but strongly associated disorder.

Part I of her lecture covers definitions for iron deficiency and anemia, differences in iron requirements, as well as bioavailability and absorption of dietary iron. In part II, Dr. Stoltzfus uses research projects in Zanzibar and Nepal to illustrate the economic and health related consequences associated with iron deficiency and anemia. Part III of her lecture focuses on potential solutions such as supplements and fortified foods.
